Analysis

Alcohol 13.0%

Total Acidity 5.5 g/l

pH 3.50

Residual Sugar 5.7 g/l

Both the Semillon and the Chardonnay were fermented and matured for eight months in 2nd fill French oak barrels. The Sauvignon Blanc was unwooded and added to give crisp, citrus freshness to the blend.

The Semillon adds a rich layer of butterscotch, while the Viognier has spicy floral and apricot aromas. The wooding is extremely delicate, adding a hint of hazelnuts. A wonderful wine to serve with Thai food, or any dishes that contain ginger and a touch of chili.
